Recipe : Grilled Sea bass

You’re going to love this Grilled Sea Bass in a Classic Butter Sauce recipe from Head Chef Sam.

You will need:
- Sea bass fillet x 2
- Tenderstem broccoli x 10
- New potatoes x 8
- Herbs of choice
- Spring onion x 2
- Shallot x 2 (finely diced)
- Butter x 125g (cubed)
- White wine/lemon juice - 100ml
- Cream - 50ml
- Salt & pepper

Method:
STEP 1.
Bring a saucepan of water to a simmer.
STEP 2.
In a separate saucepan boil your new potatoes until soft. Strain and add back to the pan adding a few blocks of butter, salt and pepper to taste. Set aside.
STEP 3.
Set the grill to the highest setting. Salt and pepper the seabass and place on a tray lined with foil skin side up and grill for 5-6 minutes at the same time add the broccoli to the simmering water.
STEP 4.
In a pan heat a tablespoon of oil on medium heat and add the shallots, sweat off and then add your wine/lemon juice and reduce by half. Remove from heat and gradually add your butter and whisk in until you get the full desired consistency. (You can add cream for more body if need be). 
STEP 5.
Finally, add your spring onion and herbs to the sauce to finish.
